Syros has a huge tradition in agriculture and cheese making through the years. San Michali cheese is a big chapter in this tradition. San Michali is one of the most emblematic and exquisite cheeses in Greece and beyond. San Michalis is a Protected Designation of Origin (PDO) cheese crafted with meticulous care. It originates from the pasteurized milk of Syros' cows, sourced exclusively from handpicked herds on the island. These cows graze on the aromatic herbs thriving in the region's arid soil, infusing the milk with their distinctive flavours.

The island boasts a centuries-old cheese-making tradition. In 1500 AD, Italian dairy cows were brought, leading to Greece's first cow cheese. This sparked a rich culture of dairy production, renowned at home and abroad.

In 2013, a passionate and dedicated group of milk producers embarked on a mission to preserve the rich cheese-making traditions of Syros. Driven by deep knowledge, respect, and love for the local heritage, they established Tyrosyra. This esteemed artisanal cheese producer is committed to upholding the highest standards of quality and traditional values, crafting a diverse range of products using exclusively Syros' milk.
