The concept of Blue Zone health and longevity refers to regions of the world where people are known to live longer, healthier lives. This cooking class will guide participants in preparing traditional Cycladic dishes that align with the Mediterranean diet. Learn to enrich your favorite recipes by emphasizing the use of olive oil, fresh herbs, and a variety of colorful, nutrient-rich vegetables.
By combining the rich culinary traditions of Syros with the principles of the Mediterranean diet and Blue Zone lifestyle habits, this unique and informative cooking class promotes not only delicious food but also overall well-being.
Fresh fruit, seasonal veggies, traditional cooking techniques, distinct flavors, and aromas make Greece a culinary paradise! Due to the Mediterranean climate, the Cyclades are blessed with many endemic plants. Legumes growing on volcanic rock, oranges flooded with sunshine, olive oils dressed in the salty sea breeze; cooking and eating are acts of romance after all.
Below are the milestones of our lessons:
1. Introduction to Blue Zones:
· A brief overview of Blue Zones and the factors contributing to longevity in these regions will be provided.
· Discuss the Mediterranean diet, which is often associated with the Blue Zones.
2. Mediterranean Diet Basics:
· Highlight the key components of the Mediterranean diet, such as olive oil, whole grains, fruits, vegetables, nuts, seeds, and lean proteins.
· Emphasize the importance of moderation, fresh, seasonal ingredients, and local produce.
3. Syros and Cycladic Cuisine:
· Introduce the participants to the unique flavors and ingredients of Syros and Cycladic cuisine.
· Discuss the reliance on fresh seafood, local herbs, and regional specialties.
4. Incorporate Blue Zone Lifestyle Habits:
· While cooking, we will discuss lifestyle habits commonly found in Blue Zones, such as daily physical activity, strong social connections, and stress reduction techniques.
· Encourage participants to embrace these habits for overall well-being.
5. Meal Enjoyment:
· Sit down together to enjoy the meal that was prepared during the class.
· Discuss the importance of savoring food, eating mindfully, and enjoying meals in the company of others.
6. Q&A and Discussion:
· Open floor for questions and discussions about the Blue Zone principles, Mediterranean diet, and healthy lifestyle habits.
· Additional tips on how to incorporate these practices into daily life.

The workshop will be divided into 5 classes

Tomatokeftedes- sundried tomato and cheese fritters- (vegan option available)
Fava beans with capers and caramelized onions
Falafel! Discover the secrets to making your own falafel at home
Class #2
Kakavia: Greek Fisherman’s Soup (vegan option available)
Wild Greens Salad: The Greek mountains are the gift that keeps on giving! If you’re a fan of wild greens, you should try Stamnagathi. The delicious vegan salad has a bitter-spicy flavor and it’s also said to have antioxidant properties!

Learn to make homemade Phyllo dough!
We will get a good workout of making dough and rolling out phyllo by hand followed by making the most delicious fennel pie, Marathopita.
Class #4
Eggplant salad with fried capers and olives
Nistisimi spanakopita - dairy free spinach pie made with our Phyllo dough leftover from last class
We will also make Loukoumades, a classic Lent honey doughnut.
Class #5
The basics of making your own herbal teas-foraging for herbs and growing your own at home. The islands of the Cyclades are well known for the biodiversity of the herbs that grow naturally in the unique microclimate (arid conditions, intense Aegean light, strong sea breeze). We will enjoy our tea with homemade Loukoumia! Pick your favorite flavor and we will make our own.
Chickpea Spinach Stuffed Sweet Potatoes- we will make a creative vegan dish inspired by the local produce found on the island.
